Green Woes: A Stellar Spinach Dip Recipe

The first time I had spinach, I spat it back onto my plate and swore never to eat anything green ever again. I grew up watching old Popeye cartoons, thinking that the green, muscle builder grew in thick, mucky clumps that the ever-famous sailor man squeezed from cans into his maw. Upon seeing that they were actual leaves, I was pleasantly surprised to discover they looked quite "natural." Then, one boiled spoonful later, I gagged at my premature eagerness.

Over the years, I've learned to cook spinach in soups and add it to salads. I was beginning to enjoy its flavor.I thought my green woes were finally over. Then one day,at a party, I sampled store-bought spinach dip... And my woes returned.

My husband loves spinach dip, and I try to make healthier, homemade alternatives for us to enjoy. When I made this batch, I was worried that he wouldn't like it because I had used much less mayonnaise than most spinach dip recipes require. But! He said it was the best dip he had ever tasted! AND he'll never buy store-bought again!


Laura's Stellar Spinach Dip
Ingredients:
1 8oz bag of spinach
1.5 cups of sour cream (i used light)
.5 c of mayonnaise
.5 of a small onion, diced into tiny pieces
juice of 1/2 a lemon, about 1 Tablespoon
2 Tablespoons of finely chopped fresh parsley
pinch of salt
1 teaspoon of paprika

Directions:
1. In a pot, boil the spinach in some water until wilted. About 3-4 minutes.
2. Drain the spinach in a colander, and when cool enough to handle, squeeze the excess water.
3. In a bowl, combine the sour cream, mayonnaise, onion, lemon juice, salt, and paprika. Mix well.
4. Add in the spinach and mix well. 

Voila! Dip.

  1. This looks so yummy! I used to feel the same way about spinach (after watching Popeye). As I got older I started trying new things and really like it now! Spinach and artichoke dip is a favorite of mine :) Heather

  6. Looks delicious! I love spinach dips, cold, hot, anyway, but I only like spinach in dips :) Great recipe will have to try it and for someone like me who doesn't make much I can actually do this one!

  11. Oh I love spinach, there's a restaurant here that makes the best spinach & cheese dip and I always order it whenever the family dines there. But yeah, nothing beats a homemade dip, I'd love to give your recipe a try :)

  13. This sounds super tasty! I'm going to try this recipe for sure. My husband hates mayo so I might fudge around with it and see if I can get away with not having it.

  14. YES - I DO want you baby! I've always been a fan of spinach since I was little. Like you, I watched Popeye and wanted to have muscles like him. Of course - it didn't help much in the physical department but it has helped me love and enjoy other veggies ;) When I have a free moment - oh maybe next May - I'll attempt this simple recipe.   22. I do like spinach :D I'm actually not a fan of it raw in salads, though - I think the leaves are too waxy for me, even baby spinach. This dip sounds yummy, but I...don't like mayonnaise. Lol! I know it's the basis of most dips and I know what it's made of, but mayonnaise itself just grosses me out, so I usually avoid it. ._.

  27. I actually love spinach..both raw and cooked. But it's definitely an acquired taste. I haven't had spinach dip in forever. Definitely a much better alternative than buying all those pre-made dips that are loaded with preservatives. I will definitely be trying this out:)

  32. i think the only spinach dip i've ever had is artichoke spinach dip @ like a million typical US chain restaurants. your recipes always look so delicious. & i love triscuits lol will def try out this dip & go buy triscuits!!

  35. I am a spinach addict! My fella and I go through so much spinach it is getting grown in the garden come spring! We could save SO much money! haha! I'm a vegan but this recipe can easily be adapted! :) And god do I love fresh parsley...   37. I LOVE Spinach. The first time I tried it was in dim sum and everyone was surprised that I even ate it because I never eat any vegetables. But I gobbled them up like there was no tomorrow. Ever since I've loved them :) I can't wait to try this recipe! The less mayo part makes me happy too :D
