It's been 14 days since I had a shred of meat.
I had been feeling really bummed about not taking advantage of the yummy, fresh summer produce this year because my work schedule conflicts with market hours, so I decided that I would force myself to eat only vegetables in the hopes that this would push me to make an effort to find different ways of enjoying them.
Now, I'm not a shabby cook, but I have to say, cooking vegetarian takes up a lot of time and calls for a lot more creativity to put together satisfying dishes. I'm used to having meat as the main part of the meal and vegetables as a side, you see. That's just how I've eaten my whole life. So this "going all vegetarian" is really like delving into uncharted territory for me.
And yes, it's very time-consuming. But yes, it's a lot of fun. And by gollies, it's ridiculously delicious.
I love that you reworked those hair clips and used them with a blouse - this whole outfit is just really cute. And I know what you mean about time consuming vegetarian cooking - I cut out meat two years ago (except for fish every few months) and the first few months involved a lot more time in the kitchen until I got skilled at a few staple staple dishes that I could make once a week and have leftovers of.

I was vegetarian for twenty years and although at first there's a learning curve, there are many easy and quick dishes you can make. Some days you don't want to put in a lot of effort. With fresh veggies, you can let them shine by themselves with minimal effort: lightly-cooked and seasoned with herbs or a simple sauce. Good luck!

ReplyDeleteI'm totally taking advantage of the summer, too - there are so many FRUITS. It's glorious. We've had tons of watermelon and blueberries and PEACHES. It's so lovely.

Those nachos look delicious. Cooking vegetarian is a pain in the ass and 6 (7? who knows now) years later I am still super lazy and just eat a lot of soup, lol. Well I mean shrimpetarian, so I guess it's a -little- less annoying.

love the red and blue color combo. Primary colors together make me happy :) Not eating meat makes me not happy :( I tried to be a vegetarian for awhile and actually managed to go about three years without but man was it hard. I dont think I could do it again.

I've been wanting to cut meat out of my diet too but I haven't found the willpower to go cold turkey (pun intended) yet. It's also an uphill battle because the BF wont go meatless with me. I grew up the same way with meat as the main dish. You'll have to let me know how you keep this up maybe I will just do it without him and he can cook for himself! lol Congratulations on 14 days!!

Although I'm not a vegetarian, I do get into my moments where I eat almost like a vegetarian. I feel healthier and "lighter" (if that's possible) but it does make a difference in my day to day being. However, I can't turn down any Filipino food which usually has meat in it.

ReplyDeleteAwesome that you're going vegetarian (i'm one), I grew up pretty much vegetarian so a simple step for switching over is using dried vegetable protein (TVP) or ground soy in place of meat, it makes things really easy. A couple vegetarian/vegan recipe books that have simple & easy to follow recipes are Fresh & Fresh at Home.

k, i must've missed why you are giving up meat? but you're right...it does take some creativity to make hearty satisfying meals. i LOVE veggies, but every once in a while i have to have meat. i have to remember to try greek yogurt on my mexican food!

This is the cutest tank top ever, omgggs! I love purple paired with pink (hot pink cardi for the winsss), as a kid I dreamed of having an entirely purple/pink bedroom. I can imagine it must be hard cutting out meat if you're use to eating it, I've entertained the idea a few times (about going veggiesaurus but I can never quite kick my meatsaurus ways).

I just made the most delicious dairy/lactose free tomato cream soup. So simple, 8 fresh tomatos pureed in a food processor, with a handful of mushrooms and half an onion, italian seasoning, salt, and about a up of water. Cook down to desired consistency and remove from heat. Add your dairy free cream of choice and viola! Sooo yummy. You've got a really great color combination going on and I'm in love with your thrifted purse. Brilliant find.

Seiously though I love cooking veggie (and now vegan) because it forces you to think outside the box and try things you've never had before. And can I just say again how your mango pico de gallo recipe is a staple in my veggie tacos now :)
ReplyDeleteVegetarian cooking can be very time consuming, but it is so yummy in the end. My husband and I go back and forth on the veggies only policy, right now we are eating meat. It might change tomorrow, who knows.

This is fabulous! Good luck on the diet. I have thought about going vegetarian or vegan for a while now, just to try it out. After going raw for a week, I feel like I can do anything! Also these vegetarian nachos look amazing!

ReplyDeleteDoesn't it blow your mind how much time you spend chopping and dicing and slicing? I totally felt the same way when Matt and I stopped eating meat (we do use it occassionally to spice up some beans sometimes) -- okay I still feel that way. But it has become a lot more normal. Maybe as a congrats you should gift yourself a gorgeous chopping block and or knife (I'm saying this to you, so it gives me permission to do the same ;).

HAHAHA! I know. it's so crazy having to chop, chop, chop. I would LOVE to buy a new knife, but I want a pink ceramic one, and those are pretty hard (and expensive) to find in town!
